I'm sorry to say, Fixing a roof on a RV is NOT Easy Or Simple. I had to totally rebuild a Motorhome roof framing and reseal it, And put a new ceiling in after that was finished. It took about 2.5 months to finish it working on it part time.

A Solar Dehydrator is definately the way to go for large amounts of Vegtables from a garden, But keep in mind figuring out a way to keep the bugs out while dehydrating the food. And using a 12 volt PC fan to circulate the heat evenly.

The Alternator of choice in my opinion is a Delco Remy for a 1977 Gmc Truck you can get a remanufactured one for around $30 at Autozone. We used to use 2x4 framing staked into the ground under trailers to attach tin skirting too, Then dig a mini trench to drop the bottom of the skirting in the ground to secure it. It eliminates putting screws into the camper.
